Ingredients:

2 c Fresh Kumquats,
cleaned and thinly sliced
½ c Red onion
¼ c Cilantro
1 Jalapeno,
seeded and thinly chopped
¾ c Olive Oil
Red pepper flakes to taste
Salt to taste

To Prepare:
  1. Slice kumquats, red onion, cilantro and jalapeno peppers
  2. Combine all ingredients
  3. Let salsa sit for 1 hour for the flavors to fully blend
