This blue veined Gorgonzola cheese is “sweeter” (less acidic) than our traditional blue cheese. Cave aging a minimum of 90 days gives our Gorgonzola a sweet flavor profile that pairs well with chicken, or on a cheese board with dried fruit and nuts. This cheese was a Gold prize winner at the 2010 World Championship Cheese Contest.

This heavenly young Gouda is expertly crafted. This European style Gouda is built for pleasing flavor and versatility in an everyday cheese. With a pleasant, buttery, lactic aroma and mildly pungent flavor, this utilitarian cheese lends itself well to breakfast, lunch, dunner and snacks.
Faribault, Minnesota is on nearly the same line of latitude as Roquefort, France. The atmosphere within the caves is ideal for the curing and aging of blue cheese. In December 1936, Mr. Felix Frederiksen purchased the caves and set up shop for the first blue cheese to be made in the United States. He named his company Treasure Cave, Inc.
