AmaGorg Gorgonzola & Cherubic Gouda Cheese

The Caves if Faribault is an artisan cheese company located in Faribault Minnesota. They use sandstone caves to age a variety of award winning cheeses.

Today, Caves of Faribault is the only U.S. cheese maker still curing and aging blue cheese exclusively in caves. This process allows the Gorgonzola cheese to distinguish itself with a complex, complicated yet delight-fully intimate flavor.

AmaGorg® Gorgonzola Cheese

This blue veined Gorgonzola cheese is “sweeter” (less acidic) than our traditional blue cheese. Cave aging a minimum of 90 days gives our Gorgonzola a sweet flavor profile that pairs well with chicken, or on a cheese board with dried fruit and nuts. This cheese was a Gold prize winner at the 2010 World Championship Cheese Contest.

 

Cherubic® Gouda

This heavenly young Gouda is expertly crafted. This European style Gouda is built for pleasing flavor and versatility in an everyday cheese. With a pleasant, buttery, lactic aroma and mildly pungent flavor, this utilitarian cheese lends itself well to breakfast, lunch, dunner and snacks.

Faribault, Minnesota is on nearly the same line of latitude as Roquefort, France. The atmosphere within the caves is ideal for the curing and aging of blue cheese. In December 1936, Mr. Felix Frederiksen purchased the caves and set up shop for the first blue cheese to be made in the United States. He named his company Treasure Cave, Inc.
Today, Caves of Faribault is the only U.S. cheese maker still curing and aging blue cheese exclusively in caves. This traditional process allows the AmaBlu Blue Cheese, Gorgonzola and St. Pete’s Select blue cheeses to distinguish themselves with a complex, complicated yet delight-fully intimate flavor. The caves allow them to work in tandem with nature to create truly legendary cheeses.
